DIRECTIONS

1. To prepare the mayonnaise:
- Put the olive oil in a cylindrical container. Add the mustard, lemon juice, a pinch of salt and a pinch of turmeric, and lastly the Sugar free Soy Drink.
- Blend with a hand mixer until the mixture reaches the right consistency. Keep refrigerated.
2. To prepare the croutons:
- Cut the bread into cubes of approximately 1-2 cm. Melt the Soy Spread in a pan and add the bread. Mix well and let the cubes brown evenly for about 10 minutes, stirring frequently. Set aside.
3. To prepare the chicken:
- Gently skin the roasted chicken, clean it and cut it into cubes of about 2 cm. Set aside.
4. To prepare the salad:
- Wash the lettuce well, then dry. Wash the tomatoes, dry them and cut them into eight wedges.
- Arrange the lettuce on a serving dish, then add the chicken, tomatoes, mayonnaise, croutons and parmesan shavings. Season with olive oil and salt and serve.

Soy Spread

INGREDIENTS FOR 6 PEOPLE

220 ml olive oil
150 g Parmesan
100 ml OraSì Sugar free Soy Drink
80 g OraSì Soy Spread
12 baby plum tomatoes
2 tea spoons mustard
2 table spoons lemon juice
1 large lettuce head
1 whole roast chicken
1 pinch turmeric
Half a loaf of bread
salt, extra virgin olive oil to taste
