DIRECTIONS

1. Clean the courgettes and cut the top with a spoon, then remove the inner pulp.

2. Place the courgettes in a steamer basket with the hole facing downwards. Put in a pot, cover and steam for 20 minutes.

3. Meanwhile, clean and chop the shallot and cut the chicken into cubes.

4. Heat the oil in a pan and sauté the shallots, add the chicken and almonds and continue to cook them until they have a beautiful golden colour.

5. Simmer with the Soy Cooking Cream, add salt and pepper and fill the courgettes (which will be cooked by now) with the mixture. Serve with a sprinkle of chives.

2 tablespoons extra virgin olive oil
150 ml OraSì Soya Cooking Cream
to taste Chives, salt and pepper
