DIRECTIONS

1. Bring the Soy Drink to a boil, remove from heat and pour in the coffee.

2. Beat the egg yolks with the sugar, then stir in the rice starch, dilute with the Soy Drink and cook the mixture over medium heat, stirring constantly.

3. Remove the pot from the heat, pour the cream over the chopped chocolate, flavour with the rum and blend the mixture with a hand mixer, making it creamy and smooth. Then place in the refrigerator for about one hour.

4. Pour the cream into the cups and garnish with mini meringues and amaretti.
